So why, I thought, don't I try making my own burrito bowl? I could hypothetically make a similar product (with lots of leftovers!) for a fraction of the cost of a Chipotle bowl. Thus, I set out to see what I could rustle up in my little kitchen that you could easily rustle up in yours too.
What you put in your burrito bowl is completely up to you. I decided to go for a version of what I order at chipotle: seasoned chicken, brown rice, fajita vegetables and guacamole. In the interest of getting all the ingredients done at the same time, you'll want to start the rice. I cooked brown rice according to package directions and tossed with chopped cilantro right before serving. Nothing fancy. While that's cooking, you can start on your ingredients.
The chicken
- 2-3 lbs assorted boneless chicken breasts and thighs
- Roughly 1 Tablespoon each cumin, garlic powder, chili powder, brown sugar
- Salt and pepper, to taste
- Coconut oil
- Heat oven to 375 F
- Heat 2 large spoonfuls of coconut oil in a stainless steel pan over medium heat until oil sizzles when you place a small piece of chicken in it.
- Meanwhile, rub chicken pieces in the spice, salt, pepper mixture. The pieces should be heavily coated. Add more spices if needed.
- Place chicken in pan, close, but not crowded. Sear for 5-7 minutes on each side, then transfer pan to the oven to cook until no longer pink on the inside.
- Set aside to cool, then cut into a large dice.
The Fajita Vegetables
- One red onion, sliced into half moons
- 2 red peppers, membranes, stems and seeds removed, and sliced
- Coconut oil
- Salt and pepper, to taste
- Heat oil over medium heat in a stainless steel pan
- Add sliced vegetables, reduce heat to medium low and cook slowly until vegetables caramelize. Stir occasionally. Season to taste.
THe Guacamole
It probably goes without saying that the main ingredient in guacamole is avocado. Anything else is completely up to you. For this guacamole, I used salt, pepper, diced red onion and cilantro. The tomato didn't make it in because a certain someone in my household has a raw tomato aversion. Put whatever you like in yours: bacon, garlic, oregano... whatever your avocado-loving heart desires.
The assembly
But, if you have two hours on your hands, a craving for Mexican food, and you feel like being Susie (or Simon) Homemaker for a night, take a stab at this burrito bowl.
